What is caramel?


Caramel has been enjoyed since at least the 17th century, when American settlers first cooked sugar and water to create "caramel candy."

Caramel is a sweet, rich confection made by heating sugar until it melts and turns golden brown. This process is called caramelisation. As the sugar heats, its molecules break down and form new compounds that create caramel’s distinct buttery flavour and smooth texture.

Caramel is typically produced by heating sugar to around 170°C (340°F). Once it reaches this temperature, it changes colour and develops a deeper, toasted sweetness. Ingredients like butter, cream, vanilla, or salt are often added to create different caramel varieties.
